Egg Sandwich



  • 1 1 Teaspoon Olive Oil
  • 3 Large Eggs
  • 3 3 Slices Low fat cheese (Swiss cheese)
  • 6 6 Slices Bread
  • 2 2 Tablespoons Chopped onion
  • 2 2 Tablespoons Chopped Tomato
  • 2 2 Tablespoons Chopped Broccoli
  • 2 2 Tablespoons Chopped red bell pepper
  • Salt and Pepper to taste


  1. Crack the eggs into a mixing bowl with a pinch of salt n pepper. Beat the eggs well with a fork.

  2. Add all the chopped vegetables and mix well. In a saucepan over low heat coat the saucepan with olive oil. Add the eggs and spread it out evenly.

  3. When it starts to turn golden brown underneath flip the egg.

  4. Once both sides are well done and golden brown place cheese over the eggs. When the cheese starts to melt slightly remove it from the pan.

  5. Divide the eggs into 3. Place each piece inside the sliced bread.

  6. Place the bread in the saucepan and toast it on both sides. Once the bread is toasted it's ready to be served.
