Ladies finger Thoran/ Vendaka Thoran / Bhindi Sabji



  • 1/4 1/4 Kilogram Ladies finger
  • 1 Onion large cut fine
  • 3 Green chilli slit
  • 2 2 Tablespoons Oil
  • ½ ½ Teaspoons Mustard
  • 1 1 Teaspoon Pepper Powder
  • 1 Garlic pod crushed (optional)
  • 1/2 1/2 Cup Grated coconut
  • A few Curry leaves
  • Salt to taste
  • A pinch of Asafoetoda (kayam) (optional)


  1. Without Coconut.....

  2. Cut ladies finger in to two pieces and then slit in the middle.

  3. Heat oil in a pan. Splutter mustard seeds.

  4. Add onion, green chilli , curry leaves, crushed garlic, kayam (optional) and ladies finger with salt. Mix well and keep it covered for 5 mintues. Do not add water at all.

  5. Open the lid, add salt and 1/2 teaspoon of pepper powder. Stir well.

  6. Cook for another 5 mintues by keeping the lid open and stirring occassionaly.

  7. When the ladies finger shrinks and the onions turn brown, add 1/4 tsp pepper powder and serve hot with with rice or chappathi

  8. With Coconut......

  9. Cut ladies finger in to about half a cm wide rounds.

  10. Mix the grated coconut, green chillies to a coarse form in a mixer.

  11. In a pan / Kadai heat oil.
    When it becomes hot, splutter the mustard seeds. Add onion, ladies finger and curry leaves. Stir well and keep covered to cook for 5 minutes

  12. When onion turns light brown, Add the ground coconut mix to it. Add salt.

    ( you may also add directly coconut and green chilli without grinding)

  13. Saute it well and cover with a lid. Saute it in between.
    Keep it in medium flame and stir its done.

  14. Serve hot with Rice
